Beef Jerky traces back to Native American culture, where it was known as "charqui." It became a staple for pioneers and cowboys during long journeys. Jerky is sliced thin, marinated, and then dried or smoked quickly at a low temperature. The marinade often includes sugar, soy sauce, and spices, resulting in a sweeter flavour. Jerky is typically sweeter, smokier, and slightly tougher than biltong.
Biltong originated in the 17th century with Dutch settlers in South Africa. The word "biltong" comes from Dutch, meaning "buttock" (bil) and "strip" (tong). Biltong is air-dried, often for up to a week. It's marinated with vinegar and spices like coriander, pepper, and salt. Biltong is usually sliced thicker than jerky and has a rich, chewy texture. The vinegar marinade gives biltong a tangy taste with a natural, meaty flavour.
